Ayoub Estate Pinot Noir 2009 Stands the Test of Time

My current favorite, the Ayoub Estate Pinot Noir 2009, literally stands the test of time.

Last week, Mo Ayoub brought in a bottle of this wine for us to taste. Now, I have tasted it before and truly enjoyed it, but the clincher here was that the bottle had been opened nine days and was absolutely beautiful still. A lot of wines after being opened a few days just fall flat. They lose the bouquet, the distinctive flavors, and the overall sensation. But this wine’s bouquet and palate was only set back just a little. The complexity and appeal was all there and almost as beautiful as before. I’d say this is a good vote of confidence indicating the ageing ability of this bottling.

Of course, I don’t suggest that we go around leaving wines open that long to find out how good they are — I think there could be quite a bit of wasted wine — and I know there are a few proverbial sayings in regard to that, but when you come across one that can hold up to that and still be delicious… It is worth mentioning!
